Blackberry Orange Cheesecake

 

Blackberry Orange Cheesecake

 

This cheesecake is made in layers.  The layers are wonderful by themselves as individual blackberry cheesecakes, or orange cheesecakes (just double one of the flavoring components and mix in the whole batch, and omit the other).

 

Ingredients:

Crust:

Ready made crust. (I prefer chocolate cookie crusts.)

Cheesecake base:

16 oz. of cream cheese, softened (low fat works fine, but avoid no-fat)

4 eggs

1/4 cup sugar (sweeter is okay, and artificial sweeteners like Splenda work okay)

1 tblsp. double strength vanilla

Blackberry flavour:

6 oz. fresh blackberries, pureed

Orange flavour:

1/4 cup fresh orange juice (concentrate works better)

1 tblsp. orange extract

Garnish:

Mandarin oranges and/or fresh blackberries

 

Mix ingredients for the cheesecake base in a medium bowl until well blended and smooth.  Divide half the mixture into a small bowl and set aside.  With half the mixture, blend in the blackberry puree and pour into the bottom of the crust.  Place in a 350 degree (Fahrenheit) oven for about 15-20 minutes until the bottom later is set.  While that is cooking, with the remaining mixture, blend in the orange juice and extract until well blended.  Remove the cheesecake from the oven and pour the orange layer on top.  Place back in the oven and continue baking for 30-40 minutes more until a knife inserted in the center comes out clean.  The orange layer may brown slightly when baking.  Garnish finished cheesecake with mandarin oranges, chocolate drizzle, and/or fresh blackberries. 

Makes 8 servings.

 

 

Blackberry Orange Chocolate Cheesecake

 

A still more decadent version of the above recipe.  Add a layer of chocolate fudge sauce to the bottom of the crust before adding the first layer of cheesecake batter.  Yum!
