Stout Cheesecake

 

Stout Cheesecake

 

Required items:

9- or 10-inch springform pan. If using ready-made pie crusts, this recipe can make 2-3 smaller pies.

 

Ingredients:

Crust:

2 cups graham cracker crumbs or chocolate cookie crumbs

4 tblsp. butter, melted

1/4 cup sugar (optional for chocolate cookie crumbs)

Cheesecake:

24 oz. cream cheese, softened (less fat works okay, but avoid fat free)

1 cup sugar or sugar substitute

1 tblsp. double strength vanilla extract

4 eggs

1/2 cup sour cream

1 cup warm stout

1/2 cup shredded asiago cheese

 

Combine ingredients for crust and press into the bottom and sides of the springform pan.  Place in oven at 350 degrees (Fahrenheit) for 5 minutes to set crust.

In large bowl, combine cream cheese, sugar, vanilla and eggs.  Cream with mixer until smooth and fluffy.  Blend in sour cream first, and then beer on low speed.

Pour into the springform pan.  Place pan into a larger pan and fill halfway with hot water.  Place in oven and bake at 325 degrees (Fahrenheit) for 20 minutes.  Reduce heat to 200 degrees (Fahrenheit) and continue baking another 2 hours.  Cool before cutting. Garnish with drizzle of chocolate sauce.

Makes 8-12 servings.
